Has any one shaped a seat starting with the bones of the seat? My dog ate my seat and destroyed the foam. I bought some closed cell foam but not sure what to do from here.

Smile I have not made a bike seat (we call them saddles in the UK) but I have made seats for boats ,usualy layered with soft then harder layers to give good support then cut to shape either with a hot wire or a bandsaw depending on the material. \Hope this helps !

In the UK we have many 'fly tippers', so I would find an old leather sofa and cut a lump out of that, seat covers are only stapled to the plastic base these days, start at the front and stretch the material. Use the original as a pattern if you can, if you need a fully waterproof black cover the material should be easily available on the web.
That dog needs feeding more.
